Pancit Palabok (Filipino Noodles with Shrimp Sauce)
Pancit Palabok is a well-loved Filipino noodle dish topped with a rich, savory orange shrimp sauce. It is usually served with rice noodles and garnished with shrimp, boiled eggs, crushed chicharrón, and green onions. This dish is commonly prepared during fiestas, gatherings, and special occasions, known for its flavorful and slightly seafood-based taste.
The Preparation
Prepare the noodles
Soak or cook the rice noodles according to package instructions. Drain and set aside.
Cook the sauce base
Heat oil in a pan, then sauté garlic and onion until fragrant. Add shrimp and cook until pink.
Add broth and seasoning
Pour in water. Add fish sauce and annatto for color. Bring to a boil.
Thicken the sauce
Dissolve cornstarch in a small amount of water, then pour into the sauce. Stir continuously until it thickens.
Assemble the dish
Place noodles on a serving plate, then pour the thick shrimp sauce over the top.
Add toppings
Top with boiled eggs, chicharrón, tinapa or shrimp, green onions, and fried garlic.
Serve
Serve hot with calamansi on the side.
