Munggo
Munggo, also known as ginisang monggo, is a traditional Filipino dish made from mung beans simmered until soft and creamy, then sautéed with garlic, onions, and tomatoes. It is often enriched with pork, shrimp, or even dried fish for added flavor, and finished with leafy greens like malunggay or spinach. Known for its earthy taste and thick, comforting texture, munggo is a nutritious and affordable meal packed with protein and fiber. It is commonly enjoyed with steamed rice and is especially popular as a hearty, home-cooked dish in Filipino households.
The Preparation
Cook the mung beans
Rinse the mung beans thoroughly. Boil in water for 20–30 minutes or until soft. Set aside.
Sauté the aromatics
Heat oil in a pan. Sauté garlic, onion, and tomatoes until fragrant and softened.
Add protein (optional)
Add pork or shrimp. Cook until browned (for pork) or pink (for shrimp).
Combine with mung beans
Pour in the cooked mung beans along with some of its broth. Stir well.
Season the dish
Add fish sauce or salt to taste. Let it simmer for 10–15 minutes to blend the flavors.
Add leafy greens
Toss in the greens and cook for 2–3 minutes until wilted.
Serve and enjoy
Serve hot with steamed rice.
