Tortang talong
Tortang Talong is a classic Filipino dish made from grilled eggplant dipped in beaten eggs and then fried. It has a smoky flavor from the charred eggplant and a soft, savory texture inside. It is commonly served for breakfast, lunch, or dinner and is best paired with rice and ketchup or vinegar.
The Preparation
Grill the eggplant
Roast the eggplants over an open flame or grill until the skin is charred and the flesh becomes soft.
Peel and flatten
Let them cool slightly, then peel off the skin. Gently flatten the eggplant using a fork while keeping the stem intact.
Prepare the egg mixture
In a bowl, beat the eggs. Add garlic, onion, salt, and pepper. Mix well.
Dip the eggplant
Dip each flattened eggplant into the egg mixture, making sure it is fully coated.
Fry
Heat oil in a pan. Fry the coated eggplant until golden brown on both sides.
Serve
Serve hot with rice and your choice of dipping sauce (ketchup or vinegar).
